This recipe got rave reviews at a ladies brunch. It is perfect to assemble the night before, cover and chill 8 hours, then bake.

Vegetable-Cheese Strata

This recipe got rave reviews at the Carpenter=s Way Baptist Church Christmas brunch. The red and green peppers make it perfect for Christmas morning!

Ingredients

  • 1 cup diced onion
  • 2/3 cup diced green onions
  • 3 T olive oil
  • 1 red bell pepper cut into thin strips
  • 1 green bell pepper cut into thin strips
  • 7 1/2 cups 1-inch Italian bread cubes
  • 2 1/2 cups shredded cheddar cheese
  • 3/4 cup Parmesan cheese
  • 9 large eggs
  • 2 2/3 cup milk
  • 1 /2 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon hot sauce

Instructions

  • Saute onions in hot oil in a skillet until tender; stir in bell pepper. Cook, stirring often, 10 minutes.
  • Spread half of bread cubes in lightly greased 9 x 13 baking dish. Top with half of vegetable mixture and sprinkle with 1 1/4 cup cheddar cheese and half of Parmesan cheese.. Repeat layers. Whisk together eggs and next 5 ingredients; pour over strata. Cover and chill 8 hours. Remove from refrigerator; let stand at room temperature 15 minutes . Bake at 350 F for 45 minutes or until set.

    Taco Soup

    My dear friend, Bootsie, gave me this recipe. There are many Taco Soup recipes, but this one does not have the preservatives of packaged taco seasoning. The recipe calls for several canned ingredients making it fast and easy, but the fresh onions, bell pepper and seasonings give this recipe its fresh flavor. Enjoy!

    Taco Soup

    Ingredients

    • 2 to 3 pounds ground beef
    • 1 large onion chopped
    • 1 large green pepper chopped
    • 3 tablespoons chili powder
    • salt and pepper to taste
    • 1 14 oz. Can cream style corn
    • 1 14 oz. Can Ranch Style Beans
    • 1 28 oz. Can tomatoes
    • 2 14 oz. Can Veg-All Mixed Vegetables

    Instructions

    • Brown ground beef, onion and pepper. Add remaining ingredients and simmer until ready to serve. (If in a pinch, you can serve immediately, but it is best to simmer 1 hour.)

      Creamy Bacon Dip

      Judging a 4-H Region Food Show has nice side benefits including getting great recipes. This dip was often looked over on a buffet table until one person tasted it, and then it was hard to keep it replenished. All the olives and bacon in a cream cheese mayonnaise mixture make it one of the best dips for vegetables. The recipe did not win the show, but it is a winner in my book. Enjoy!

      Creamy Bacon Vegetable Dip

      Ingredients

      • 2 8 oz pkgs cream cheese
      • 1 cup mayonaise
      • 1 4 oz can ripe olives chopped
      • 1 tablespoon lemon juice
      • 1 4 oz can green chilies chopped
      • 1 cup sour cream
      • ½ cup purple onion chopped
      • 1 cup bacon bits real
      • ½ cup green olives chopped
      • 1 large cabbage with leaves

      Instructions

      • Soften cream cheese in microwave and place in mixer to blend with mayonnaise and sour cream. Add remaining ingredients and gently mix to blend. Chill in refrigerator and serve with fresh vegetables in hollowed cabbage or ice bowl,

        ABC Wraps (center left) and Veggie Wraps (top and bottom) were very popular at Sweets and Eats, They made a beautiful sandwich tray along with Grilled Veggie Wraps, BLT Wraps and Muffeletta Wraps.

        Four different sandwich wraps were served at Sweets & Eats but ABC Wraps were the most popular followed by Turkey BLT, Muffalettas and Veggie Wraps. All of the recipes are included here.

        ABC Wraps

        Avocado Bacon and Chicken Wrap

        Equipment

        Ingredients

        • plain flour tortilla 10 inch

        Creamy Guacamole Smear

        • 1 avocado
        • 1 8 ounce pkg cream cheese
        • 1/3 bunch cilantro
        • 1/2 jalapeno seeded; can add more
        • 1 tablespoon chopped onion
        • 1 teaspoon lemon juice
        • Salt to taste
        • bacon bits
        • 2 ounces cooked chicken per tortilla

        Instructions

        • Soften cream cheese.
        • Combine cilantro, jalapeno and onions in food processor; pulse until chopped fine.
        • Combine cream cheese, cilantro mixture and avocado together. Add juice and salt.
        • Warm tortilla to soften in the microwave.
        • Spread generously with Creamy Guacamole Smear.
        • Sprinkle with bacon bits.
        • Add 2 ounces of chicken then roll up burrito style. Cut in half.

        Notes

        Recipe for Creamy Guacamole Smear was used in the ABC Wraps at Sweets & Eats,  The recipe in the video was simplified but the wrap process is still the same.

        Turkey BLT

        Ingredients

        • 1 spinach tortilla 10"
        • 1 spread mayonnaise
        • 1 sprinkle bacon bits real
        • 2 ounces turkey
        • 1 lettuce leaf
        • 5 grape tomatoes

        Instructions

        • Microwave tortilla to soften.
        • Add ingredients in order listed.
        • Roll up tortilla burrito style and cut in half.

        Muffaletta Wrap

        Ingredients

        • 1 Herb Garlic Tortilla

        Muffuletta Spread

        • 1/3 cup pimento-stuffed green olives finely chopped
        • 1/3 cup black olives finely chopped
        • 1/2 teaspoon dried oregano
        • 1 tablespoon extra virgin olive oil
        • 2 8 ounce pkg cream cheese softened
        • mozzarella cheese shredded
        • 1/2 slice cotto salami
        • 2 ounce ham

        Instructions

        • Soften tortilla in the microwave.
        • Mix the next five ingredients to make the Muffaletta Spread. Smear desired amount on the tortilla.
        • Sprinkle shredded mozzarella cheese.
        • Place on cotto salami and ham.
        • Roll up Muffaletta tortilla burrito style and cut in half.

        Veggie Wrap

        Ingredients

        • 1 Jalapeno Cheese Tortilla 10 inch
        • hummus generous spread
        • Mozzarella cheese shredded
        • grilled veggies yellow squash, zucchini, peppers, onions

        Instructions

        • Grill veggies in olive oil. Salt and pepper to taste.
        • Heat tortilla to soften.
        • Generously spread hummus on tortilla.
        • Sprinkle on Mozzarella cheese.
        • Add grilled veggies.
        • Roll up tortilla burrito style and cut in half.

          Avocado Encharritas

          Serving the production staff of Food Network…. It is always a challenge to add a vegetarian option to a meal and make it go with the rest of the sides. We offered this entree along with our Layered Chicken Enchiladas, Mexican Rice and Avocado Black Bean Salad.

          Avocado Encharritas

          Ingredients

          • 1/2 cup clarified butter total
          • 4 large flour tortillas
          • 1 yellow onion sliced thin
          • 1 red pepper cut in strips
          • 1 green pepper cut in strip
          • 2 avocados remove skin and slice
          • 1 cup mozzarella cheese shredded
          • salt
          • pepper
          • sour cream
          • salsa

          Instructions

          • Prep ingredients. Melt one stick of butter in the microwave. Let sit for a few minutes as clarified butter rises to the top and the milk solids and whey settle to the bottom. Spoon the clarifed butter into another container. Cut up vegetables. Preheat oven to 350 F.
          • Brush both sides of the tortillas with clarified butter. Add 2 tablespoons of clarified butter to a saute pan and heat on medium. Add onion and peppers to the pan and saute until tender crisp. Season with salt and pepper to taste.
          • Divide cooked vegetables evenly onto tortillas. Top with sliced avocado and mozzarella cheese. Roll as burrito leaving one end open.
          • Place on baking sheet and place in oven. Bake until starting to brown and cheese is melted.
          • Remove from oven and top with sour cream and your favorite salsa. Enjoy!
